Hallo die richtige Erklärung scheint folgende zu sein:

Da sich ein 'normaler Hof' in der damaligen Zeit (und vielleicht auch heute
noch) keinen Braten in der Woche leisten konnte, deutet das Schlachten eines
Schweins in der Woche auf einen gewissen Wohlstand. Auf kleineren Höfen,
falls überhaupt Schlachtvieh vorhanden war) hatte das Personal in der Woche
nicht genug Zeit für das arbeitsintensive Schlachten. Insoweit ist die
Erklärung von Herrn Wierhake völlig korrekt.

Since on a simple homestead there was eventually (if at all) only sufficient
time and man power on a weekend to slaughter a pig - it was certainly a sign
of wealth to do this during the week.

May I try out my translation? Ronald, Werner is the expert in German, but, 
it is a cute poem. Here is what Herr Wierhake's  rendition seems to say:
Hog butchers, in the middle of the week, urge you to come and order bacon or

something!

Business was probably slow in the middle of the week, and so, they did a bit

of advertising, come and get it!
